I love cooking. I love knowing that the meal my family is eating has been made with love. It is important to me to make sure we are eating well. There is definitely a misconception that eating healthy must lack flavor and be boring.

{I thought the same thing at one time!}

I have since learned that is not the case. You can eat well and have all the flavors! This was the first recipe I discovered that required pesto. When I first made it a couple years ago I honestly didn’t even know where to find pesto in the grocery store! I know now and know that it is made from basil. Random fact if you didn’t know either!

I love this recipe because it’s simple and colorful. I love food that is colorful!

What you need:
Pesto
Mozzarella cheese
3-4 Chicken breasts
2-3 Roma tomatoes
Olive oil

Directions:
Preheat oven to 400
Pour olive oil into pan and place chicken breasts
Add pesto on top of each piece of chicken with spoon
Slice roma tomatoes and place enough to cover the chicken
Top with mozzarella cheese

Cover with aluminmum foil and bake for 30-40 minutes until the juices run clear. Serve over rice.
